advantages and disadvantages.
Steam Sterilization
The steam heating conducts heat from surface to core section
result in a longer sterilize time. It has a negative influence on the material
including aroma and nutrition. It also consumes much energy, sophisticated
operating program and poor continuously working features
Irradiation Sterilization
Irradiation sterilization destruct material molecular
structure, producing irreversible damage; the irradiation residue destroy food
original flavor, discolor original food color; the amount of irradiation food
should be less than 10kGy which is not sufficient to kill stubborn harmful
bacteria. Some countries and areas do not allow import food with irradiation sterilization
process which is still a controversial issue.
Microwave
Sterilization
Microwave sterilization method has many advantages including high
efficient, energy saving, uniformly heating, lower temperature process, keep
food original flavor and nutrition, no pollution and highly automatic etc. In
the food industry, microwave is applied in sterilization, drying, cooking,
heating, roasting, baking and puffing. On the other hand, microwave is easily
installed in the workshop and started to sterilize process. The cost-effective
is very competitive than other sterilize type.
