There are some common questions which often come up with drying insects. We would like to answer here.
1. Risk Assessment for HACCP for Acheta Domesticus (crickets), Tenebrio Molitor( mealworm) and Hermetia illucens (Black Solider Fly Larvave). Processes are not equal for the three of them, but similar in their steps, except crickets which would have additional steps. What’s the additional steps?
The additional step is blanching which mainly we need to ensure that dust and dirt are removed from insects and larvae, despite the fact that microwave would sterilize them successfully
2. there is a blanching step previous to drying, which means that the insects would have a highest level of moisture than fresh insects.
Actually, if we drain the insects properly. There would not be much moisture than fresh insects because there is also moisture lost.
3. What’s the final moisture content we could achieve by microwave drying machine?
We could reach the moisture under 5% by applying our microwave machine to contribute to milling powder material.
4. Can we pack insects immediately after microwave drying process?
It had better cool insects to room temperature prior to pack them to prevent condensation.
5. We are afraid microwave processing affect the quality of the product?

6. Will the microwave drying machine maintain insects original shape and color?
Yes, microwave can puff the cricket, BSF larvae and mealworm so they are maintained original shape. Microwave dry the crickets has the light color when crickets are milling to powder. One of our customer compare the color between microwave dryer and hot air dryer, the microwave dried crickets has a light color and more natural.
