The principle of microwave tea fixation is mainly to use the rapid raised temperature to passivate the active oxidase of fresh leaves, inhibit the oxidation of enzymes, and prevent the color change in the subsequent drying process. Since the evaporation rate of water is fast, it is easy to form porosity, and the rehydration of the product is good. The dissolved matter is easily dissolved when the tea is brewed.
3. Sterilization and alcoholization. In the process of picking and making tea, there is often the possibility of secondary pollution. Microwave has the function of sterilization and alcoholization. Microwave can kill eggs, mold and bacteria at lower temperature. The alcoholization function of microwave is irreplaceable by other machinery, especially for summer and autumn tea, which is quite effective in addition to bitterness.
